I had a sudden craving for fish tacos. But I wanted to stay on the healthy side and use tilapia filets, rather than breaded, battered deep-fried fish. Time including preparation/cooking: 47 mins.I baked the tilapia in a mixture of red onion, black pepper, salt, olive oil, and crushed red pepper, nothing too crazy. I work with whatever's in our fridge, which isn't much nowadays. At 375 degrees for about half an hour, the tilapia came out moist and flavorful. I chopped up some tomatoes and cabbage/carrot slaw on the side to add on top. I realized how much I suck at chopping tomatoes. And finally just a touch of green salsa for a little kick. Wahoo's eat your heart out. And Strawberry lemonade is a nice suitor for this meal, although a Corona would've been a good fit, too.
